Hillside Winery Heritage Series Syrah

I always find Syrah to be a great match for duck, so this weekend I made pizza topped with green pepper, mushrooms, red onion and homemade Toulouse Sausage. I made the sausage using a recipe created by Chef Evan Robertson from The Bistro at Hillside Winery. Although Toulouse Sausage is traditionally made with pork, Chef Evan bends the rules by adding duck to his mixture. I paired this gorgeous pizza with the equally beautiful 2018 Heritage Series Syrah from Hillside Winery.

2018 Heritage Series Syrah $36.00

This wine is made from 100% Syrah sourced from the Hidden Valley Vineyard on the Naramata Bench. The grapes were harvested on October 26, 2018 and underwent a 9 day cold soak with an additional 17 days of skin contact. The wine was aged for 8 months in French oak (21% new) and 622 cases of wine were produced.

After eight hours in the decanter this delicious Syrah offers aromas of cured sausage, black pepper, India ink, blackberry, black cherry, prune, lavender and liquorice pastels. This is a dry wine, medium+ in body, with medium+ acidity and plush, medium tannins. On the palate there are notes of blackberry, black cherry, black plum, black pepper, hints of cured meat and tamarind with a medium+ finish.
