Laughing Stock 2019 Pinot Gris

This warm spinach and artichoke dip is another time saver. It makes a large batch that you can prepare ahead of time and freeze until you need it. Pair it with your favorite Prosecco, Sauvignon Blanc, or Pinot Gris.

Last weekend I paired this dip with Laughing Stock Pinot Gris, which I ordered through SPUD.CA from JAK’s Liquor.

2019 Laughing Stock Pinot Gris $19.99

This wine was made using 100% Pinot Gris, sourced from Thomas Ranch in Okanagan Falls. Whole cluster pressing with no skin contact. Fermented in 37% neutral Fresh oak barrels, 36% stainless steel and 27% concrete eggs. This wine was aged sur lie for 6 months with weekly stirring.

The 2019 Pinot Gris from Laughing Stock has aromas of blossom, crushed gravel, peach and pear. This is a dry, medium bodied wine with medium+ acidity. The palate offers pear, peach, crushed gravel and grapefruit pith with a salty-savory medium finish which has just a touch of white pepper.

Warm Spinach and Artichoke Dip

Ingredients

2 – 250g Packages of Cream Cheese

4oz Feta

2 tsp Honey

1 tsp Worcestershire Sauce

1/4 tsp Tabasco Sauce

1/4 tsp Black Pepper

2 Cloves of Garlic

10.6oz Mozzarella

2.7oz Parmesan

398ml Can of Artichoke Hearts

1oz Bread Crumbs

1.3oz Whipping Cream

0.7oz Lemon Juice

8oz Fresh Spinach

2.7oz Onion

Directions

Preheat oven to 350 degrees Fahrenheit.

In a medium bowl, cream together the cream cheese, feta, honey, Worcestershire sauce, Tabasco sauce, black pepper and finely, chopped garlic until whipped and smooth.

In a large bowl, mix together the grated mozzarella, grated Parmesan, chopped artichoke hearts and bread crumbs.

Use a food processor or immersion blender to puree spinach. Add whipping cream, lemon juice and finely chopped onion; blend until smooth.

Add the cream cheese mixture and the spinach mixture to the mozzarella mixture in the large bowl; mix until just incorporated.

Pour into an oven proof dish and bake for 30-40 minutes until bubbling.

Alternatively this mixture can be frozen until you need it.

For individual servings, bake in ramekins or line a muffin tin with phyllo pastry or spring roll wrappers and bake the individually portioned dips until they are hot and bubbling.

Serve with tortilla chips or warm crostini.
