Liquidity just released a new non-vintage (N/V) sparkling wine. It is classified as “non-vintage” because the grapes used to make this wine were harvested in two different years.
In 2018, the Pinot Noir for this wine was harvested, whole cluster pressed and fermented in stainless steel barrels; it aged on its lees for 16 months.
In 2019, the Chardonnay Musque and Pinot Noir were harvested, whole-cluster pressed and fermented separately.
The 2018 Pinot Noir, 2019 Chardonnay Musque and 2019 Pinot Noir were blended together to create a base wine before being transferred to a pressure tank where the bubbles were generated. The result is a lovely, crisp, sparkling wine that paired perfectly with quiche Lorraine.

The Liquidity N/V Bubbly offers aromas of crushed gravel and grapefruit with notes of pear and apple underneath. This is a slightly off-dry, sparkling wine, with medium+ acidity and a refreshing mousse. The palate has flavours of baked apple, almond, honeydew, peach and lemon.
