TIME Family of Wines: 2020 Whites

On the weekend I paired two TIME Family Chardonnays with a couple of delicious dishes. I partnered the 2020 Chronos Chardonnay with Whipped Feta with Roasted Tomatoes. The 2020 McWatters Collection Chardonnay was paired with velvety Butternut Squash Soup and Flaky Buttermilk-Bacon Biscuits.

Lynzee Schatz is the winemaker at TIME Wines and she joined the team in 2019. Lynzee grew up in the Okanagan and developed the wine bug at the age of 18, as a cellar hand at Summerhill Pyramid Winery. She soon left the Okanagan for Australia, where she completed a Bachelor of Wine Science at Charles Sturt University. Lynzee completed several vintages abroad before returning home to British Columbia in 2014. She worked at Vancouver Urban Winery, Postmark Brewing and Okanagan Crush Pad before landing her current job at Time Wines. I recently had a chance to taste through some of Lynzee’s 2020 whites and they are definitely worthy of your attention.

2020 Chronos Sauvignon Blanc $28.99

This wine is made from 100% Sauvignon Blanc sourced from the Okanagan Falls Vineyard. The grapes were harvested in two lots, hand sorted and whole cluster pressed. Each lot was fermented separately with varietal specific yeasts before being blended together to achieve balance.

Aromas of grapefruit, gooseberry, peach pits and grass. This is a dry, medium bodied wine with medium+ acidity. The palate offers grassy notes, along with sweet apricot and pineapple, before the acidity kicks-in bringing flavours of lemon and grapefruit on the medium finish.

2020 Chronos Sémillon $29.99

This wine is made from 100% Sémillon, which was hand sorted and whole bunch pressed. 54% of the wine was fermented in stainless steel while 46% was fermented in neutral French oak barrels (20% new French oak). The portion fermented in oak underwent malolactic fermentation and the wine is unfined.

Whiffs of blossom, followed by aromas of underripe pineapple, grapefruit, pear, ginger, dried grass and butter. This is a dry, medium bodied wine with medium+ acidity. The palate offers pineapple, papaya, pear, hay and buttery notes before spicy ginger, lemon and salinity take over on the medium+ finish.

2020 Chronos Chardonnay $29.99

This wine is made from 100% Chardonnay. The grapes were hand sorted and whole bunch pressed before undergoing fermentation in stainless steel tanks. Weekly lees stirring took place for three weeks post fermentation. This wine is unfined.

Aromas of blossoms, pear, soft notes of pineapple, yellow grapefruit, peach pits and crushed gravel. This is a dry wine that is medium- in body and the acidity is medium+. The palate offers apple and pears leading to mouthwatering lemon, peppery minerality and grapefruit rind on the medium finish.

2020 McWatters Chardonnay $34.99

This wine is 100% Chardonnay sourced from two vineyards in Osoyoos. The grapes were hand sorted and whole bunch pressed prior to fermentation in French oak barrels (20% new French oak). Fermenation was followed by lees stirring and malolactic fermentation.

Aromas of grilled pineapple, buttered popcorn and hints of green apple, dried apricot and mango. This is a dry, medium bodied wine with medium acidity. The palate offers buttered popcorn, pineapple, cream cheese danish and apricot with a medium+ finish.
