TIME Family of Wines: Chronos Brut

Earlier this year the TIME Family of Wines underwent a makeover. Now these beautiful new labels have been released and they are ready to take part in your holiday celebrations.

Chronos is a new line in the TIME Family of Wines. It is crafted for those who love the Okanagan terroir. “World-class quality with depth, complexity, and command of detail. Production of these wines is precise and unrushed with a connection to the finest winemaking traditions in the Okanagan.” (TIME Family of Wines)

The Chronos Brut is a blend of 80% Chardonnay and 20% Pinot Noir. The grapes were sourced from the King Family in Penticton, Mirror Lake in Osoyoos and 3 Sisters in Naramata. They were hand sorted and then whole bunch pressed. The Chardonnay and the Pinot Noir were fermented separately, with some lees stirring on the Chardonnay. The wines were then blended before undergoing a second fermentation in a large, stainless steel tank; this is known as the charmat or cuvée close method. In this method, the wine is combined with a mixture of sugar and yeast in a large, pressurized tank; the sugar and yeast producing a second fermentation. Under pressure from the closed tank, the carbon dioxide from the second fermentation produces bubbles in the wine.

This sparkling wine has a fairly pronounced nose, which bursts with green apples and aromas of pear, peach and dried apricot. This is a dry wine with medium+ acidity. The palate offers more green apple, peach, lemon, lime and biscuit with dried apricot on the medium finish.

I rarely pair dry wines with dessert, but when enjoyed with milk chocolate, this wine tastes like the chocolate covered jellies in bridge mix! Ideally I would pair this wine with charcuterie or simply to welcome friends and family to holiday celebrations.
