Over the weekend we put up our Christmas decorations. Whilst we decorated, we enjoyed our very last bottle of wine from Whispering Horse. Whispering Horse is currently sold out, but luckily they are set to release FOUR new, ancestral method sparkling wines. The release will include L’Acadie (dry, crisp and white); Pinot Gris (dry, earthy and Rosé); Adorn (dry, fruity and red) and La Crescent (off-dry, luscious and white).
La Crescent WILD 2020 $28.95
Whispering Horse only uses sustainably farmed, estate grown grapes and they are in the process of converting to organic farming. The grapes for this wine were gently crushed and destemmed prior to fermentation with indigenous yeast. The wine was aged for six months sur-lie in stainless steel. Bottled unfined and unfiltered on March 6th 2021, with 12 g/L Residual Sugar. The 2020 La Crescent WILD underwent a second fermentation in the bottle, this second fermentation resulting in a dry, sparkling wine. (13% Alcohol 8.3 TA pH: 3.34 RS: 3.2g/L)
The 2020 La Crescent WILD has aromas of blossom, starchy apples, lemon, nectarine, dried grass and nettle. This is a dry wine with medium acidity. The palate is crisp and refreshing. There are flavours of nettle, orange oil, lemon and dried apricot, with nectarine on the medium+ finish.
If you follow the news, you will know that the southwestern tip of British Columbia (BC) was hit hard by a storm this past weekend. Entire communities are under water and parts of our major Trans Canada Highway have been destroyed. Many communities are without food and others have been evacuated.
