TIME Winery & Kitchen: Red Wines for the BBQ and the Cellar

I recently had the opportunity to try three new wines from Time Winery & Kitchen in Penticton. I paired the 2018 TIME Cabernet Sauvignon, Cabernet Franc and Syrah with a delicious beef dip, but these wines will pair well with any of the grilled meats coming off your BBQ this summer.

2018 Cabernet Sauvignon $39.99

The grapes for this Cabernet Sauvignon were sourced from the Haynes Point Vineyard in Osoyoos and the Gold Hill Vineyard in Oliver. The grapes were handpicked, crushed and destemmed before being fermented in stainless steel tanks. The wine was aged for 18 months in French oak barrels.

The 2018 TIME Cabernet Sauvignon can be enjoyed now with a long decant and a ribeye steak, or carefully cellar for several more years and enjoy. This wine has aromas of blackcurrant, blackberry, black plum and graphite. It is a dry wine that is medium+ in body with medium+ acidity and high tannins. The palate offers blackcurrants, savory herbs, black plum and blackberry with graphite and tobacco on the lingering finish.

2018 Cabernet Franc $34.99

The grapes for this wine were sourced from the Adega Vineyard in Osoyoos and the Halla Vineyard in Kaleden. The wine itself was aged for 16 months in both French and American oak barrels.

After 3 hours in the decanter, the 2018 TIME Cabernet Franc has aromas of dried herbs, black pepper, blackberry, bramble and dried blackcurrants with hints of cherry and vanilla. This is a dry wine that is medium+ in body with medium+ acidity and medium tannins. The palate offers dried herbs, black pepper, vanilla, blackberries, dried blackcurrant and tobacco with a lingering finish.

2018 Syrah $39.99

The grapes for this Syrah were sourced from the Stark Vineyard in Osoyoos and the wine was aged for 18 months in small, French oak barrels.

The 2018 TIME Syrah has aromas of violet, black pepper, vanilla, blackcurrant and clove. This is a dry, medium bodied wine with medium+ acidity and medium tannins. The palate is bright at first, offering flavours of blackcurrant, black plum, salty black liquorice, savory herbs and black pepper with a medium finish.

The tasting room and wine shop at TIME Winery & Kitchen is open daily from 12:00-6:00. Their heated patio is open Wednesday-Friday from 12:00-7:30; reservations are recommended.
